Nectarine Vanilla Protein Pancakes

Ingredients

-1 scoop vanilla protein powder (i used Garden of Life’s Vanilla grain-free protein)
-2 whole eggs
-1 Tbsp coconut flour/meal
-Dash of cinnamon
-A dropper-full of liquid stevia
-1 small, chopped nectarine

Instructions

-Preheat a skillet with a Tbsp of coconut oil
-Combine eggs, stevia, nectarine together first.
-Incorporate the coconut flour, protein powder & cinnamon into the wet mixture, slowly.
-Pour your pancake mixture into your preheated skillet.
-Batter will make 1 large pancake or 2 medium pancakes.
-Enjoy this healthy treat!
**Make them in bite size cakes for an on-the-go snack!
